Spätzle with three types of mushrooms



Came back from a getaway weekend to Germany with a packet of ready-made spätzle, so I came up with this quick recipe that can feed a crowd. The creamy cheesy sauce brings the flavours together and adds some saltiness to the dish.

You'll need:

Spätzle
shimeji mushrooms
oyster mushrooms
cremini mushrooms
bacon cut into small cubes
cream
grana padano
smoked paprika 
butter
oil for frying 
black pepper 
parsley


1. Cut oyster mushrooms into smaller pieces and thickly slice the cremini mushrooms. Fry all the mushrooms on a pan, adding a little bit of butter and a generous dose of black pepper for taste. 
2. Fry the bacon and combine with the mushrooms. Add cream, grated grana padano and smoked paprika. Mix in the spätzle and cook together for a few minutes, e voila!
3. Serve with parsley and some extra grana padano on top.
